Traditional karate and modern training for all ages

Wise Warriors: Over 50’s Program

Minimites—Ages 3-4

Minimites helps young kids develop focus, balance and basic self-defence techniques in a supportive environment. Classes are energetic and engaging, designed to build self-confidence while reinforcing positive behaviour at home and school.

Kindymites—Ages 5-6

Kindymites bridges the gap between early learning and more structured karate training, helping students refine their techniques and discipline. Children build coordination, respect and resilience as they progress through clear skill milestones.

Dynamites—Ages 6-9

Dynamites is designed for primary school students ready to challenge themselves and develop stronger karate skills. We combine practical self-defence, teamwork, and goal-setting to support personal growth and steady progress towards a black belt.

Dragons—9-14

Our Dragons program builds on existing skills with more advanced techniques, endurance training and leadership development. Students strengthen their confidence, improve focus and take greater responsibility for their martial arts journey.

Adults

Our adult classes deliver traditional karate training focused on technique, fitness and practical self-defence. Whether you are a beginner or returning to martial arts, we tailor sessions to suit different fitness levels and support long-term progress.

Character Development

To elevate our long-standing “mat chats,” we’ve introduced monthly character sheets focused on 12 vital values. By exploring concepts like courage and honesty, we aim to spark meaningful conversations between our students and parents, helping children face life’s challenges with determination.

Okinawa Kobudo & traditional weapons training

For students interested in extending their karate journey, Okinawa Kobudo offers the study of traditional weapons. Training may include bo staff and other classical tools, taught with strict supervision and respect for tradition.

Fight Fit

Our Fight Fit program blends cardio kickboxing with functional strength training. It is perfect for those wanting high-energy sessions without contact sparring. Members improve physical fitness, reduce stress and build endurance in a motivating group setting.

Black belt martial arts

The Black Belt Club is designed for committed students who want to fast-track their progress and refine advanced techniques. Members receive focused training, leadership development and clear guidance as they work towards achieving their black belt with confidence and discipline

HVMAC Morisset Timetable
Brian Hayes
Kyoshi | Chief Instructor | HVMAC Principal

Kyoshi Brian Hayes has been teaching Chitokai Karate since 1983. He was graded to 7th Degree Black Belt by his instructor, Hanshi Ken Sakamoto, in Kumamoto in 2018. 

Sensei Hayes has won national titles in Arnis,  Koshiki karate and also as a NSW team member for 8 years at the  Australian Karate Federation national titles.

Competed in five Chito Ryu world titles, winning tournament Grand Champion in 2001 in Kumamoto Japan. 

Sensei Hayes is also a Silver level NCAS coach and  holds a Diploma  in Sports Coaching. 

Along with his wife, Shihan Sandy Hayes, he founded the Hunter Valley Martial Arts Centres, and is responsible as Chief Instructor for teacher training and grading standards at HVMAC dojos.

Sensei Hayes also holds a 6th Degree Black Belt in Matayoshi Kobudo, a Shodan in Iaido and a brown belt in Machado Brazilian Jiujitsu.

Sandy Hayes
Shihan | Master Instructor | HVMAC Principal

Shihan Sandy started Judo in a small town in British Columbia, Canada at the age of 11. She started karate in the 1980's at the age of 15. She was the only girl in the class. 

On the provincial team from 1986-1990 in Canada, and on the NSW state team 1992-1998. 

1986 Soke Cup - bronze in kata

1992 Soke Cup - bronze in kata and gold in team kumite 

Australian Karate Federation nationals - bronze in team kata 

Sensei Sandy is dedicated to empowering women and children in the community. She developed the Kindymites and Minimites programs, and the Fight Fit program. 

Lesley Talbut
Shidoin | Senior Instructor | Studio Principal
Born in the UK, Lesley moved with her family to Australia in 2007. Her children started karate at Warners Bay in 2008 and Lesley soon followed finding a passion for martial arts and the values it represented. Opening the Morisset dojo in 2012 meant she was able to follow the dream of helping kids and adults experience what she and her family have from being part of the HVMAC family. Sensei Lesley owns and runs Morisset dojo. 
 
Lesley is 3rd degree black belt in Chitokai karate and 2nd degree Black Belt in Okinawan Kobudo. She holds a NCAS Bronze Level Coaching accreditation and a Certificate 4 in Fitness Coaching Martial Arts. Lesley is also an Advanced Rock and Water instructor and often teaches the Rock and Water program to Primary and High School kids in local schools.
Georgia Dearlove
Shidoin | Senior Instructor | Program Director

Sensei Georgia is achieved her Sandan (third degree black belt) in Chitokai Karate in 2025. She also trains in the Hunter FF Program and is a Rock and Water accredited provider. 

Erin Talbut
Shidoin | Senior Instructor | Program Director

Sensei Erin began karate in 2008 and achieved her Sandan in 2023 and Kobudo black belt in 2022. Sensei Erin is a bronze level NCAS accredited coach.

Kirk Pitzner
Fight Fit Instructor

Sensei Kirk is the Morisset senior Fight Fit instructor. He started martial arts in 2015 and is a Shodan in karate. Sensei Kirk achieved his Nidan in Fight Fit in June 2021. He also trains in Matayoshi kobudo.

Jonah Haines
Instructor

Sensei Jonah started training at the age of 8. He achieved his Nidan in 2021. Sensei Jonah currently teaches the Xtreme program at Morisset as well as competing in Xtreme at ISKA. 

Jai Hamilton
Assistant Instructor

Sensei Jai achieved his Nidan (second degree black belt) in 2025. Jai also trains in the Hunter Fight Fit and Okinawan Kobudo programs.

What ages can join your martial arts programs?
Hunter Valley Martial Arts Centre offers martial arts classes for kids, teens and adults on the Central Coast. Each program is tailored to suit specific ages and ability levels, so every student can train safely and progress with confidence.

Do I need experience to start martial arts?
No experience is needed to join our martial arts programs. We welcome beginners and provide step-by-step instruction to help new members build skills, fitness and self-confidence from their first class.

What style of martial arts do you teach?
Hunter Valley Martial Arts Centre teaches traditional karate, Muay Thai-style training, and fitness-based programs. Our martial art programs combine practical self-defence techniques with structured skill development.

Do you offer self-defence classes on the Central Coast?
Yes. Our programs include practical self-defence training as part of regular classes, helping students develop awareness, technique and confidence in real-world situations. We also offer classes for ages 50+, so everyone can learn self-defence skills in a safe, supportive environment.

Can adults join karate classes?
Absolutely. Our adult karate classes are suitable for beginners through to advanced students, with training adapted to different fitness levels and goals.

What should I bring to my first class?
For your first class, wear comfortable training clothes and bring a water bottle. If you decide to join, our team will provide a free gi!
